Whole Wheat Banana Chocolate Chip Muffins
This recipe produces heathy and tasty muffins, that provide a good low-fat
snack.
- Preheat oven to 350 degrees
- Oil 12 muffin
- Mash: 2-3 reasonably-sized bananas
- Mix in 2 eggs
- Mix in 1/2 cup milk and 1/2 cup brown sugar
- Add all at once: 1.5 cup whole wheat flour, 0.5 cup white flour, 2 level
teaspoon of baking powder
- Mix to combine; don't stir it more than necessary
- Add 1/3 cup semi-sweet chocolate chips
- Place in oiled muffin trays (this makes 9-12 muffins depending on the
size)
- Bake for 20 Minutes; test with a skewer before removing
- Let cool a bit before removing from pan
Variants:

Add blueberries, blackberries, raspberries with the chocolate chips. Make sure they are not
cold; warm them in warm water before adding.

Use grated carrots instead of bananas.
